Mont again...with a question

Our Mont Switzer has had another excellent article published; this time in the September 2017 NMRA Magazine.  Great article and photos as usual.  His topic was repairing a Monon forty foot boxcar built in 1947.  328 of the 500 built had roof hatches installed by Shops during a rebuild just before the merger with the L&N which I assume was for grain loading.  I've seen numerous photos of boxcars loaded with grain.  My question: just how clean/sanitary were the interiors of the cars?  A quick sweep with a broom doesn't seem adequate to me.  And if the floors were wood, how would you really clean them and keep the grain from escaping between the boards?
